Easy Buckwheat Pancakes

These pancakes are great for breakfast or for a snack and they contain some great healthful ingredients.

Buckwheat Flour

Buckwheat is not a grain but a seed. It is gluten free and a very good form of fibre and has a a low-to-medium glycaemic index. This means it may even lower blood sugar levels as well as being great for your gut . Plus it contains heart-healthy nutrients, magnesium and fibre. and the anti-oxidents rutin and quercetin.

Coconut Oil

Coconut has many health benefits and contains MCT oil. Research has shown some evidence shows that consuming MCTs may increase the number of calories your body burn and it may help promote weight loss. MCT is also very good for brain health and may help to prevent or slow the development of age related cognitive decline and Alzheimer’s disease.


Maca is a source of  Zinc and is high in magnesium, iron and calcium. Maca has traditionally been used in South America as a natural medicine to treat various health conditions, such as respiratory conditions and rheumatic disease. Research also suggests that Maca can promote libido and fertility.

Easy Buckwheat Pancakes

  1. Place the flour in a large bowl. Add the hot water, almond milk, a pinch of salt, almond butter, maca and 1 teaspoon of coconut oil mix thoroughly.
  2. Heat the coconut oil in a large frying pan or on a griddle over a medium heat. Pour a ladleful of batter onto the an and cook both sides until golden brown.
  3. Enjoy with your favourite filling!
