Cashew Ranch Dip

Cashews are a good source of magnesium. Research has found that Magnesium may strengthen bones, protecting against osteoporosis. Magnesium is also good for brain function reducing headaches and migraine, helping with depression and anxiety and improving sleep. Magnesium can hep some women with PMT and is linked with lower blood pressure and lower cholesterol levels. Cashews also contain calcium essential fatty acids, Vitamin E, Vitamin K, Vitamin B6, copper, potassium, magnesium, zinc, folate, antioxidants, fibre, proteins and carbs. The U.S. Food and Drug Administration (FDA) have approved a health claim for food labels that “eating 1.5 oz per day of most nuts as part of a diet low in saturated fat and cholesterol may reduce the risk of heart disease.”

Directions

  1. In a blender, combine all the ingredients until smooth and creamy, scraping down the sides as needed. (*if unable to soak cashews for at least a couple of hours, a “cheat” is to soak them in boiling water for as long as you can, even if it’s just a few minutes. This s to soften the cashews, but when soaking longer it also helps our bodies absorb more nutrients).
  2. Transfer to a bowl and serve with vegetable crudites, lentil chips, bread sticks or crunchy pita bread.
  3. Store in an air-tight container in the fridge for up to 4 days
